In this weeks blog, Anna Smith reviews the delightful recipes in the vegetable cookery book The Green Roasting Tin by Rikmini Iyer.

So when you’ve  grown the most wonderful vegetables in the Growing Together project this book will inspire you to cook delicious meals with them. 

Beetroot, chickpea and coconut curry


Who could resist:
– Chipotle Roasted Sweetcorn with Squash, Black Beans, Feta and Lime, 
– Stuffed roasted Fennel and Mushroom  or 
– Beetroot, Chickpea and Coconut Curry?

I could go on; they are all delicious! And best of all, the recipes are quick and easy ‘tray bakes’. Vegetables are prepared, mixed with oil, spices , cheese etc and then popped in the oven!  Hey presto – meal on the table! 

Many of the recipes are inspired by the author’s Indian mother so a warning for anyone trying to avoid food air miles as some of the spices will have travelled *.
